『夏野菜たっぷり 万能山形だし』 【材料】 6人前 ナス 2本 きゅうり 2本 大葉 4枚 ミョウガ 2個 ①塩 小さじ1/2 ①水 600ml ②酒 大さじ2 ②みりん 大さじ2 ③がごめ昆布 10g ③しょうゆ 大さじ1 ③かつお節 2g 【手順】 1. 野菜をみじん切りします。 ボウルに切った野菜と①を入れて5分置き、ザルにあげて水気を切ります。 2. 鍋に②を入れて中火で加熱し、ひと煮立ちさせたら火からおろして粗熱をとります。 3. ボウルに1、2、③を入れて混ぜ合わせ、冷蔵庫で2時間程度冷やします。 野菜に味がよくなじんだら完成です。 【コツ・ポイント】 塩加減は、お好みでしょうゆの量を調整してください。 また、薄口しょうゆでも代用することができます。 野菜はお好みでオクラや長芋を入れても美味しいです。 【レシピの紹介】 夏野菜がたっぷり入った、山形だしのレシピです。 粘り気のあるがごめ昆布と、かつお節を一緒に和えることで、旨みたっぷりのだしに仕上がりますよ。 お好みの夏野菜を追加して、自分流にアレンジしてみるのも良いですね。ぜひお試しください。 ——————————————
